What is simple syrup?

Simple syrup is just sugar dissolved into water, usually by gently heating the two together until the sugar disappears. The ratio of sugar to water determines how sweet and thick the syrup is.

Common ratios

  • 1:1 (Standard): equal parts sugar and water by volume — the most common ratio for cocktails, iced tea, and lemonade.
  • 2:1 (Rich): twice as much sugar as water by volume, giving a thicker, sweeter, longer-lasting syrup often used in bartending.

Enter the amount of water you’re starting with and pick your ratio, and this calculator gives you the matching amount of sugar to dissolve in it. The combined volume shown is approximate, since dissolving sugar into water doesn’t add up to a perfectly simple sum of the two starting volumes.
