What this calculator does

Steak cook time depends mainly on thickness, the heat of your cooking method, and how done you want the center to be. This calculator scales standard reference cook times for a 1-inch steak on high heat to your actual thickness and method, and shows you the internal temperature to aim for.

How the estimate is built

Cookbooks and grilling guides commonly cite a per-side time for a 1-inch steak at each doneness level over high heat. This tool starts from those reference times, scales them proportionally to your steak’s thickness, and adjusts slightly for method – a hot pan sears a bit faster than a grill, while oven roasting or broiling is slower and more gentle.

  • Rare: 125°F internal
  • Medium-Rare: 135°F internal
  • Medium: 145°F internal
  • Medium-Well: 150°F internal
  • Well Done: 160°F internal

Times are estimates only – the true test of doneness is an instant-read meat thermometer inserted into the thickest part of the steak, since stove output, starting temperature, and cut of meat all vary. Always let steak rest for a few minutes after cooking so the juices redistribute.
