Fresh garlic vs. dried garlic
Fresh garlic cloves, garlic powder, granulated garlic, and garlic salt all deliver garlic flavor at different strengths and moisture levels, so recipes use different substitution ratios for each.
The common kitchen guideline is that one medium fresh garlic clove is roughly equal to 1/8 teaspoon of garlic powder, 1/4 teaspoon of granulated garlic, or 1/2 teaspoon of garlic salt (which also adds sodium, so seasoning should be adjusted accordingly). This calculator applies those standard ratios in either direction.
- Clove size varies naturally, so this is based on an average medium clove.
- If substituting garlic salt, consider reducing other salt in the recipe to avoid over-salting.
These ratios are general cooking guidelines for recipe planning, not exact scientific conversions — adjust to taste.
