Why yeast types aren’t interchangeable 1:1
Active dry yeast, instant yeast, and fresh (cake) yeast all leaven bread, but they contain different proportions of live yeast cells and moisture, so equal weights don’t have equal leavening power. Fresh yeast is mostly moisture and needs roughly twice the weight of active dry yeast to match its strength, while instant yeast is more concentrated and needs less.
How this calculator works
Using standard baking conversion ratios (fresh yeast ≈ 2× active dry by weight, instant yeast ≈ 0.75× active dry by weight), the calculator converts your amount to an active-dry-yeast equivalent, then converts that into your target yeast type.
Note: These are widely used baking industry approximations. Individual brands may specify slightly different substitution ratios on their packaging, so check the label when precision matters for a delicate recipe.
