Why grams and cups aren’t a fixed conversion

A cup is a unit of volume, but a gram is a unit of weight, so the conversion between them depends on how dense the ingredient is. A cup of flour weighs far less than a cup of butter or sugar because flour is light and full of air pockets, while butter and sugar pack more densely.
